With a light and fluffy texture that gets better with every mouthful and tasty icing that begs you to sink your teeth in them, donuts are everyone’s favourite indulgence. So, why not learn to make your very own sugary delights with these fun recipes? They’re all surprisingly quick ‘n easy to make with affordable ingredients and they look so good they’ll impress even your harshest critic!

Our Healthy, Fuss-free Donuts

To keep things super simple, we’re going to make all 3 types of donuts out of the same baking mix. Better yet, we’re not going to be using a scorching hot fryer or difficult yeast, so it’ll be easy for everyone – even if you’re a novice in the kitchen!

Oven-baked donuts are much lower in fat than traditional deep-fried ones, so these will make great snacks if you like eating healthy. A portion of butter is also substituted for yoghurt in the batter recipe. This locks in the moisture, making the donuts extra yummy, while keeping calories low and adding an extra dose of protein.But before you roll up your sleeves, make sure you’re all geared up with suitable baking tools and stocked up on the freshest ingredients.

Ingredients

*Makes 3 round donuts, 12 munchkins and 3 filled donuts.

  • 190g all-purpose flour
  • 100g granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 medium egg, at room temperature
  • 150ml yoghurt, at room temperature
  • 60ml milk, at room temperature
  • 3 tablespoons melted unsalted butter

Making the Batter

Preheat the oven to 175°C/350°F. In a medium-sized bowl, use a large spoon to stir the flour, sugar, baking powder and baking soda together. In another medium-sized bowl, use a whisk to beat the egg, yoghurt, milk and melted butter. Finally, make a well in the centre of the dry ingredients and pour in the wet ingredients, then gently stir the batter together until it’s smooth. Remember not to overmix or your donuts will turn out flat.

Making Round Donuts

  1. Lightly grease the round donut pan with butter or non-stick spray then fill 3/4 of each donut mould with batter.
  2. You can spoon the batter in, but it’s so much easier and cleaner if you use a piping bag or a small jug with a spout. If you don’t have either of these, you can make your own piping bag by pouring the batter into a plastic kitchen storage bag and snipping one of the corners off with a pair of scissors.
  3. Bake the batter in the preheated oven for 10 minutes then leave the donuts to cool in the pan at room temperature.

Making Munchkins

  1. Lightly grease the moulds of the cake pop maker and completely fill each mould with batter.
  2. Again, this job is much easier if you pour the batter into a piping bag or jug!
  3. Close the cake pop maker lid and cook according to the manufacturer’s instructions – this will take about 5 minutes.

If you don’t have a cake pop maker and are using a mini muffin pan:

  1. Lightly grease the mini muffin pan with butter or a non-stick spray then fill 3/4 of each donut mould with batter.
  2. Place in the preheated oven and bake for 10-12 minutes, until the tops turn golden brown and they’re springy to the touch.

Making Filled Donuts

  1. Tear a piece of strong tin foil (30cm x 30cm), fold it into half twice to create a square and shape it into a round donut mould. You can do this easily by placing something round (like a glass or a mug) in the centre and shaping the foil around it.
  2. Lightly grease the mould with butter or non-stick spray and pour the batter in, filling each one about 1/2 full.
  3. Bake in the preheated oven for 12-15 minutes, until the tops are lightly golden brown and they’re springy to the touch.
  4. Leave the filled donuts to cool down completely in their moulds before filling them.

Decorating and Filling In Your Donuts

Now that you’ve made your donut base, it’s time to get creative!

Baked donuts will taste amazing just as they are. They’ve got a wonderfully fluffy cake-like texture and are best when they’re still a little warm – perfect for when you want something yummy to nibble with your cuppa!

But if you want to really show off your kitchen skills and impress your friends and family, decorate them with bright pops of colour! Here are some ideas to get you started.

*Ingredient quantities below are suitable for 1 donut. Adjust ingredient proportions according your desired serving size.

Chocolate Glazed Donut

  1. Finely chop 1 square of milk chocolate and place in a small bowl.
  2. Pour 1 teaspoon of milk into another small microwave-safe bowl and cook in the microwave for 30 seconds, until hot.
  3. Pour the heated milk over the chocolate and leave for 1 minute, until the chocolate partially melts.
  4. Stir the mixture until smooth, then dunk one side of each donut into the chocolate glaze and add sprinkles.
  5. Leave to set at room temperature or in the fridge before eating.

Pro-tip: If you happen to have a jar of Nutella or Lotus Speculoos spread, you can use these instead! Use the spreads when they are at room temperature so you can spread them easily without breaking the donut.

Lemon Poppy Seed Glazed Donut

  1. Whisk 1 tablespoon of icing sugar (or powdered sweetener) and 1/2 teaspoon of fresh lemon juice until you get a runny glaze.
  2. Dip one side of each donut into the glaze and sprinkle over some poppy (or chia!) seeds.
  3. Leave to set at room temperature or in the fridge before eating.

Strawberry Glazed Donut

  1. Roughly chop 1-2 fresh or frozen strawberries and place them in a microwave-safe bowl with 1 teaspoon of water and 1 teaspoon of sugar.
  2. Cook in the microwave for 60 seconds at a time, until the strawberries turn into a puree. You can squash the strawberries down with a fork to speed the process up.
  3. When the mixture has turned into a thick glaze, spoon it over your donut.
  4. Leave to set at room temperature or in the fridge before eating.

Pro-tip: Make sure that donuts are completely cool before glazing.

Cinnamon n’ Sugar-coated Munchkins

  1. While you are baking the munchkins, stir 1 teaspoon of brown sugar together with 1/4 teaspoon of ground cinnamon in a small bowl.
  2. Once the munchkins are cooked and while they’re still warm, drop each one into the cinnamon sugar bowl and roll it around until it’s totally covered. (You need to do this step while the munchkins are still hot so the cinnamon sugar sticks.)

Cinnamon sugar munchkins taste the best when they’re warm, so pop them into your mouth and eat them right away!

Sweet Coconut Coated Munchkins

  1. In a small bowl, stir 1 teaspoon of powdered sugar and 2 teaspoons of milk together.
  2. Pour 1 teaspoon of shredded coconut into another small bowl.
  3. When the munchkins have cooled, dip each one into the sugar-milk mix, making sure they are totally covered.
  4. Then roll each munchkin in the shredded coconut.
  5. Leave to set at room temperature or in the fridge before eating.

Oreo Cheesecake Coated Munchkins

  1. When the munchkins have cooled, beat 2 teaspoons of room temperature low-fat cream cheese and 1 teaspoon of powdered sugar (or powdered sweetener) until it’s light and fluffy.
  2. Spread the cheesecake mix on top of each munchkin and top them with Oreo cookie crumbs.

Strawberry Jam Filled Donut

  1. Scoop 2 tablespoons of strawberry jam into a microwave-safe bowl.
  2. Cook jam in the microwave for around 30 seconds, until it’s warm so it’s easier to pipe.
  3. Make sure there are no big lumps in the jam – if there are, just squash them with a fork – and scoop the warm paste into a piping bag fitted with a metal tip.
  4. Poke the metal tip into the centre of each donut and fill with as much jam as you can before lightly dusting with icing sugar.

Gooey Chocolate Filled Donut

  1. Scoop 2 tablespoons of your favourite chocolate spread into a piping bag fitted with a metal tip.
  2. Poke the tip into the centre of each donut and fill with chocolate spread before lightly dusting with icing sugar.

Peanut Butter Filled Donut

  1. Scoop 2 tablespoons of smooth peanut butter into a piping bag fitted with a metal tip.
  2. Poke the tip into the centre of each donut and fill with as much peanut butter before lightly dusting with icing sugar.
